A red wine made from grapes from the best certified organic vineyards of the estate, which are already 44 years old and 70% of which are located around the village of Trilofos at an altitude of 150-250 meters.
The remaining 30% comes from the village of Fytia at an altitude of 450-650 meters.
The climate in the area is characterised as warm-continental with winds from the sea and from Mount Vermio on the other hand playing a catalytic role during the ripening period, keeping the grape temperatures low for the season but healthy at the same time.
High-altitude vineyards maintain even lower average temperatures due to the greater temperature difference between day and night and the colder and stronger winds.
The maceration lasts for 40 days with 40% of whole cluster bunches. Fermentation starts with native yeasts and lasts for 2 to 3 months.
