The variety ‘Lemnos’ is a characteristic variety of hard wheat of excellent quality of Lemnos, widely known with references in numerous scientific writings.
However, its cultivation has been discontinued in recent years as local producers have turned to improved varieties with higher yields.
In 2012, after obtaining the seed, the Salamoussas company began the process of reviving the crop. The wheat produced is hulled and packed in a 500 gram bag and part of the production is milled to produce the flour of the same name.
It can be used in many recipes such as salads and can be cooked as a soup or substituted for rice.
