Cantharellus cibarius are native mushrooms of the species Cantharellus cibarius Fr. which appear in Greek forests in May and November. They prefer broadleaf forests such as beech, oak, hazelnut, poplar, birch, ash, and linden.
Immediately after harvesting, the mushrooms are sorted, cleaned and dried using the most environmentally friendly technology: the Greek sun.
After the stay in the solar dryer they are placed in the thermal dryer where at a temperature of 60oC the final product is pasteurized.
The solar drying technology significantly improves the quality of the dried mushrooms in terms of colour, texture and flavour, enhancing the intensity of the flavours. The main advantage of solar drying is the natural enrichment of the mushrooms with vitamin D, as ergosterol is converted into ergocalciferol when exposed to natural ultraviolet sunlight.
