Dry red wine, from organic dry vineyards located in the village of Fytia in Imathia. The vines ripen in light stony soils based on slate and granite.
The climate in the area is characterised as warm – continental with winds from the sea and from Mount Vermio on the other hand, playing a catalytic role during the ripening period, keeping the grape temperatures low for the season. In this case, the high altitude vineyards maintain even lower average temperatures due to the greater temperature difference between day and night and the colder and stronger winds.
The maceration lasts for 18 days with 20 % of whole cluster bunches. Fermentation starts with native yeasts and lasts for 1 to 3 months.
